TOMATO JUICE with basil? SPICY SAUCE also based on tomatoes? There are two mandatory dishes when the garden is blessed with tens of kilograms of tomatoes. I remind you, we recently introduced you to the new Philips multifunctional vertical mixers. These appliances are so versatile that they can be used permanently in my summer kitchen, for a lot of appetizing recipes. I also used this type of mixer on these culinary occasions!







TOMATO JUICE WITH BASIL

It can't be simpler than that! I picked the ripe tomatoes from the garden, cleaned them a bit, cut them into quarters, put them in the special cup of the mixer and used the multifunctional vertical mixer with barbarism, crushing the tomatoes in a few seconds. Then, I drained through a thick sieve, storing the solid matter in the pulp and seeds. (I want to use it in the next recipe!) I put the well-squeezed juice in a large pot, adding a little salt, that's all. After it boiled and cleaned the foam, I added some freshly picked green basil leaves from the spice garden, put the lid on the pot and let the juice take on a little flavor for about 20 minutes. Then I took out the leaves and transferred the juice to the bottles for the winter. What I had left, about three cups, I put in the fridge and drank it at noon, when the heat was stronger & # 8230

HOT SAUCE (version of Mrs. Romanciuc's & # 8220agica & # 8221 sauce)

I'm fascinated by the world of sauces. I once wrote, together with Mrs. Jeni Romanciuc, the book & # 8220Gradina Imperiului. Recipes from Bessarabia of all flavors & # 8221 (Ed.Trei / Lifestyle Publishing, 2008). One of the first recipes there was AGICA, a kind of winter salad or, rather, sauce, prepared from well-ripened tomatoes, an equivalent amount of hot peppers, some donuts, enough garlic, salt and pepper. The recipe is made cold, without boiling and without oil, and tomato seeds are out of the question. But I decided, now, to adapt a little delicious recipe and I made a spicy sauce based on the semi-dry matter left over from the tomato juice, ie part of the pulp and, alas, the seeds (actually, the mixture of pulp and seeds , from which I did not really squeeze all the juice). I put this stuff in the pan, along with a few quartered tomatoes, half a cup of tomato juice (as I still had left!), Salt, freshly ground red and green pepper, sea salt, Dizzy Pig with infusion of coffee (Dizzy & # 8217s Red Eye Express) 4 finely chopped onions (2 red onions and 2 white onions), about 8 cloves of sliced ​​garlic, green basil leaves, green thyme crumbled between your fingers and about 10 hot peppers cut & # 8211 with scissors! & # 8211 very small. I only put a little oil and I stirred continuously in the pan, for 25 minutes, over medium to low heat. What came out is a demented sauce, quite hot, that goes with meat, potatoes, steamed sweet corn, pumpkin meatballs or & # 8230 with everything else that comes to mind. It can be kept for the winter, in a cool and dark place. (I said & # 8220cool and dark & ​​# 8221, not otherwise!)

Method of preparation

Put butter and oil in a pan, add the onion and leave it until it caramelizes, then add the other ingredients, finally add the tomatoes and soy sauce, taste and season with a pinch of salt. Put the sauce in the blender and blend well and strain.
Prepare the rice, clean it of impurities, wash it, put butter and oil in a pan and add the rice and three parts water, add a pinch of salt and let it boil, baking it for 14-16 minutes.
We clean the shrimp from the shell, we break the head of the shrimp, we cut on the back and we remove the blue thread, after which we wash and put the shrimp on absorbent paper, to remove the excess water.
Heat a non-stick pan in which we put oil and butter and add the shrimp, letting them simmer on both sides, then take them out and leave them waiting. Put the sauce back in the pan and add the shrimp. We take a cherry tomato and pull it in the pan.

How do we make the best grilled seafood?

For this recipe I chose to make grilled shrimp in three ways, with three flavors, from three countries. I chose Greece, India and China. For Greek style shrimp we chose their classic flavors: oregano, garlic, lemon juice and olive oil. When I was in Greece I found these flavors in all preparations. For the Indians, I chose their specific spices and marinated the shrimp in yogurt. For the Chinese style I used soy sauce, garlic, ginger, sweet chili sauce and pineapple juice. When I put them on the skewer, I added a few more pieces of pineapple for a slightly sweet taste and a wonderful aroma. All these flavors are truly wonderful and you just have to choose the one you like.

As I told you, I cooked these grilled shrimp on skewers in the Tefal Optigrill XL electric grill. I didn't have to check the shrimp to see if they were ready, or to worry that they might be overcooked. The grill has a special program for seafood and cooks shrimp perfectly every time. When they were ready, all I had to do was serve them. You can choose to serve them with your favorite sauces, with salad or why not, with grilled vegetables. We really like garlic sauce or spicy sauce. If you like grilled fish, you can also try my recipe grilled salmon with vegetables au gratin. The salmon is so tasty, and the vegetables are really delicious.


Pasta with sweet-spicy sauce

In a deep frying pan, heat 30 ml of olive oil over medium heat.
Add the chopped onion and sauté for 5 minutes or until transparent.
Then add the crushed garlic and cook for another 5 minutes or until lightly browned.
Add the chopped tomatoes and the canned juice and leave on the fire for 5 minutes, or until the composition starts to bubble.
Then add half of the chopped baked peppers and the dehydrated tomatoes.
Add tomato paste, red wine, inactive yeast, basil, oregano, salt, pepper and sugar and mix well.
After the mixture is evenly heated, lower the flame.
Simmer, covered, for at least an hour, stirring every 15 minutes.
If the sauce thickens too much, add a little water.

An hour before the meal, taste the sauce and season it more, if necessary.
Add the olives, stir and continue to simmer, with a lid, on low to medium heat for 30 minutes.
Add the remaining mushrooms and baked peppers.
Cover again and simmer for half an hour.

Cook the pasta according to the instructions on the package.
Drain the pasta and mix well with the sauce.

Ce ziceti de o portie de creveti in sos de branzeturi, pentru o cina rapida si aromata?

Am facut o pasiune pentru creveti, mai ales in ultima perioada, care a fost super aglomerata si agitata. Iar aceasta reteta m-a salvat sa nu dau fuga sa comand ceva (poate nesanatos), pentru ca se face chiar foarte usor si este delicioasa. Fetele dragi din redactia Andreearaicu.ro chiar au gustat si ele si nu a mai ramas nimic. Ce nota primesc crevetii mei in sos de branzeturi?

Ingredient:

3 catei de usturoi, tocati marunt

1/2 lingurita piper macinat

1 conserva rosii taiate cuburi

1/4 lingurita mix de ierburi italiene (optional, putem folosi doar oregano uscat)

cateva frunze de busuioc proaspat

Method of preparation:

Spalam crevetii si ii tapotam cu un servet de bucatarie, ca sa inlaturam excesul de apa.

Topim untul intr-o tigaie, adaugam sare si piper, calim crevetii aproximativ 1-2 minute pe fiecare parte sau pana cand se fac roz. Ii scoatem pe o farfurie si o lasam deoparte.

Adaugam usturoiul tocat marunt in aceeasi tigaie si il gatim 30 de secunde. Turnam peste smantana, rosiile cuburi din conserva (cu tot cu sucul lor), parmezanul razuit si ierburile italiene. Lasam sosul sa fiarba timp de 5 minute, sau pana cand incepe sa se ingroase.

Completam cu sare si piper (daca simtim nevoia), adaugam frunzele proaspete de busuioc si crevetii gatiti anterior.

Servim crevetii calzi, cu o felie de paine cu maia, sau chiar peste o portie de paste fierte.
