Delicious quince jam! In the country, there are still some quinces kept in the colder rooms, put up on the closet, to smell nice in the house. The word of the carol: "Yellow quince / sweet-bitter / lamp at the window / all our life" ...
- 4 large and ripe quinces
- 1 kg. sugar
- 2 cups of water
- lemon juice
- 2-3 fresh drusain leaves

How I prepare quince jam:
The quinces are washed well with down and cut into small cubes. In a saucepan put the sugar with water and lemon juice on the fire and let it boil over low heat until you get a well-bound syrup.
Add the fruit and leave until it changes color and becomes reddish, and the juice has dropped quite a bit. It does not decrease too much because, after cooling, quince jam it will stick quite well, close to the consistency of quince pellet.
Secret from my grandmother: after we stop the fire, we break two or three fresh leaves of drusain (who has it in the house) and mix it in quince jam.
What a perfume! What a wonderful aroma!
