Green lasagna Bolognese

First, prepare the Bolognese sauce
Chop carrot, celery and onion then sauté them in a saucepan with the olive oil.

Meanwhile, prepare the green pasta

Start working by beating the eggs from the center
Add the spinach and knead the dough for 15 minutes adding more flour if the dough is too sticky

Form a ball, then cover the green dough with a cloth and let it rest for 30 minutes

Cut the dough into smaller pieces, Roll out a little dough at a time with a rolling pin,

then gradually pass various pieces of dough into the pastry cutter and obtain rectangular sheets with a thickness of a few millimeters, and the size of the pan you want to use I set the roller at 3

Place the sheets obtained on a floured pastry board

now blanch the sheets of green pasta in a large pan with plenty of boiling salted water in which you have added a drizzle of oil,

Lift then put to dry on a clean cloth.

Now go and assemble the green Lasagne alla Bolognese put a layer of béchamel on the bottom of an oven dish, then lay the first sheet on the surface
Then cover with a layer of meat sauce, one of puff pastry and one of béchamel and parmesan and so on alternating béchamel and parmesan with the pastry and ragu. In total I used 6 sheets.

Close with a sheet of pasta, then sprinkle the surface of the lasagna with a layer of bechamel and sprinkle with plenty of grated Parmesan. I made 2 trays with 6 layers of lasagna each. Bake the green Lasagne alla Bolognese at 180 ° and cook for about 30 minutes.

Once your lasagna is ready, let it settle for half an hour before serving.
