Penne alla vodka is one of my sister's favorite dishes and every time she has lunch with me, I make them for her. Penne alla vodka can be prepared either in white or with the addition of a little tomato paste. Yesterday I opted for a variant: penne with caviar and vodka :)
How to make vodka penne
In a pan, melt the butter.
Add the vodka to the pan with the melted butter and let it evaporate for about 1 minute.
Now add the cream, add salt and pepper and cook over low heat for a few minutes.
Meanwhile, cook the penne in plenty of salted water, drain when al dente and pour into the pan with the vodka sauce.
Sauté the vodka penne in a pan and add the lumpfish roe at the end. Mix gently so as not to break the fish eggs.
Serve the vodka penne with another sprinkle of pepper and a teaspoon of caviar.
