Thermomix potato zeppole

Potato zeppole is one of the typical Neapolitan sweets of San Giuseppe, prepared to accompany or replace the zeppole di San Giuseppe.
They are prepared with a potato-based dough, intertwined in the shape of an "L", fried and then passed in sugar. With this recipe you can make them with the thermomix.

Method

How to make potato zeppole with the thermomix

Grate lemon zest and sugar for 20 sec. at vel. Turbo and set them aside.
Peel the potatoes and cut them into cubes, add 500 g of water and cook for 25 min. 1, temp. Varoma.
Drain the potatoes, put them back in the jug with the butter and mix for at least 1 min. 4.
Then add the sugar, the eggs, and the crumbled yeast and knead for 2 min. 5.
Finally add limoncello, flour and salt and knead for 3 min. Ear.

Form some cords of dough, about 1 cm and a half thick and about 20 cm long and cross the ends in order to obtain cursive "Ls" or, more simply, close them in a ring shape.
Let the zeppole rise on a floured pastry board for about 2 hours, well spaced.
Pour the seed oil into a pan with high sides and wait for it to heat up, then fry the donuts until golden brown.
Quickly dry them on a sheet of absorbent paper, pass them, still hot, in the sugar and serve.
