There omelette with peppers it is a tasty and colorful dish that you can also prepare in advance and serve cold. You can serve it as an appetizer, as a main course, or even as a main course, accompanied by a nice salad and fresh bread. In this case I prepared it from scratch, in order to give you some more information and help those who are beginners even with the cooking of vegetables, but you can also use this recipe to consume already cooked and leftover peppers in a pan. , or even gratin peppers!

How to make the pepper omelette
First wash the peppers and clean them, then cut them into strips.
Chop the onion and sauté it in a pan with a little oil, then add the peppers.
Add salt, cover with a lid and cook for 15-20 minutes or until tender.
Drain them from the oil, without throwing it away, and let them cool.
In a bowl, beat the eggs with salt, pepper and Parmesan.
Add the peppers and mix gently.
Pour some of the cooking oil from the peppers into a pan, add the egg mixture, cover with a lid and cook over medium-low heat for 5-6 minutes or until the eggs have congealed.
Then remove the lid, raise the heat and cook for another 3-4 minutes.
Serve your pepper omelette hot, lukewarm or even cold.
