Here is a slightly particular recipe but easy to make and refined and elegant, in its simplicity: the ricotta and caviar cream. I know that not everyone appreciates caviar, but it is considered a real delicacy and if you want to impress your guests and are willing to spend a little more to celebrate New Year's Eve, try it and let me know what you think.
The recipe for this ricotta cream comes from a friend of one of the girls who works with me and it seemed perfect to close this 2015, I found it really good. Today last day of work away in Ivano's office, they were very intense and profitable days, I don't know how she went from going on vacation to taking a vacation to working twice as much these days, but that's okay. How to make ricotta and caviar cream
Put the ricotta in a bowl.
Clean the onion and grate the white part itself in the bowl with the ricotta (you can use the green part for other recipes).
Add the marjoram and mix.
Then add half of your caviar.
Mix, taste and season with salt.
Line a bowl about 12 cm in diameter with cling film and fill it with the cream. Keep in the fridge for at least 1 hour.
Once well firmed, take the cream and turn it out on a serving saucer, then cover it evenly with the remaining caviar.
Serve it to accompany the toasted croutons.
