Honey-glazed ham is a cornerstone of British cuisine, ideal to bring to the table on these festive days thanks to its scenic presence and its flavor that makes Christmas so much. To prepare the Glazed Ham I took inspiration from recipe by Gordon Ramsay, one of the chefs I love most, when I saw his recipe on TV in fact I always thought that sooner or later I would try to replicate it. A couple of years ago I tried the recipe for another of his roasts, the wellington fillet with great success, but this year I wanted something more refined and I hit the mark. The meat was very tender, the smell in cooking is intoxicating and the taste is amazing, a recipe that is more than promoted I would say. If you are looking for a particular Christmas second dish and you like sweet flavors, this recipe might be for you. I greet you and get to work, today it takes a double coffee before starting, basins: *
How to make honey glazed ham
First of all, tie the pork ham with kitchen string, so that it does not deform during cooking.
Put it in a large pot, cover it completely with water and add carrots and onions, peeled and in pieces, pepper, cardamom, cinnamon and bay leaf.
Put the lid on and bring to a boil, then remove the lid, lower the heat to low and cook for 25-30 minutes, skimming the fat that will rise to the surface from time to time and adding more boiling water if necessary.
Then remove it from the pot, place it on a cutting board and let it cool.
(You can strain the broth and save it for other recipes.)
In the meantime, prepare the icing: put sugar, marsala, vinegar and honey in a saucepan and mix.
Cook while continuing to stir until it boils, then lower the heat and cook for a few minutes, until you get a syrup.
Remove the string from the pork ham then (if you bought the ham with all the rind, remove it and then), being careful not to cut the meat, carve the fat forming a diamond pattern.
At each intersection between the cuts, insert a clove.
Place the meat in a baking dish and sprinkle it with half of the glaze.
Bake in a preheated oven at 190 ° C and start cooking.
After the first 10-15 minutes, start sprinkling the meat with the cooking juices, do it every 5-10 minutes.
Cook for about 40 minutes or until the ham is a nice dark golden color.
Remove from the oven and let the glazed ham rest for at least 15 minutes. Then cover it with the leftover icing, then cut into slices and serve.
