Vegetable charcoal bread is now available in many bakeries and supermarkets. Also in my Facebook group you can occasionally see bread, pizza and even mozzarella colored black with charcoal which, before you ask me, yes, that's exactly what you take for digestive problems! The products prepared with this special ingredient in the dough, in fact, in addition to having a curious gray-black color, will also tend to be lighter ... maintaining the same flavor! To make an even lighter bread I used type 1 flour, if you can't find it you can use 0 flour, decreasing the water by about 50 ml. Vegetable charcoal, on the other hand, can be found in herbal shops, in tablets (to be reduced to a powder for the recipe) or directly in powder, as in my case (in this regard, I thank the Sapori del Grain bakery for kindly providing me with the coal). How to make charcoal bread
Gently mix the flour and charcoal in a bowl.
Dissolve the yeast in water at room temperature
Add the mixture to the bowl and start kneading.
Then add the oil and salt and mix well.
Finally form a loaf, cover the bowl with cling film and let it rise for about 2 hours or until doubled. (If it is very cold in your home, place the bowl in the switched off oven, with the light on.)
Transfer the dough to a pastry board covered with parchment paper (so as not to dirty the work surface with black).
Make the 3 folds.
Then shape the dough into a loaf and let it rise again for 1 hour.
Sprinkle with sesame seeds and, with a sharp blade, make transversal cuts that are not too deep.
Finally, bake in a preheated static oven at 200 ° C and bake for 20-30 minutes.
Let the charcoal bread cool before serving.
