I greased a pan with butter, I put 1/3 of the amount of polenta over which I put the cheese, and 1/3 of the polenta, then I placed the scrambled eggs with the finely chopped ones and covered with the rest of the polenta. On top I greased it with butter and I whipped it from place to place with a fork to penetrate the butter inside. I put it in the oven for 15 minutes.

The good part is that with the detachable handle the pans can be stored in each other, taking up very little space. Moreover, I like that I can put them in the oven, so I don't need to transfer food to another bowl.

It is very easy to do polished in layers. Of course you need polenta. To be tastier, I boiled the polenta in milk and at the end I added sour cream. For the other layers I used cheese and smoked meat. For the cheese, I used Telemea cheese and sweet cheese. This way the cheese will not be too salty, and the taste will be perfect. For smoking I used raw-dried turkey pastrami. I like it because it's tasty and not fat at all. Instead, it has that smoky taste that goes very well with polenta. Of course you can also use smoked sausages or other types of smoked meats.

After you have prepared the polenta and the rest of the ingredients, all you have to do is put them all in layers. It is very important to move fast. The polenta thickens as it cools, so you have to put it warm in the bowl and level it nicely. If you want, you can add between layers and boiled eggs and exclude the ones above. Layered polenta is served hot with sour cream. It can be eaten simply as such or with your favorite dish. Cum se face placinta invartita cu branza si jumari?

Puteti citi reteta scrisa pas cu pas, sau sa treceti direct la video recipe, dedesubt.

1. Prima data se framanta aluatul, care este la fel cu cel de la placinta cu branza si foi din aluat dospit , cu diferenta ca aici se foloseste untura sau unt gras la framantat.

Faina se cerne de 2 ori inainte, ca sa se elimine eventualele corpuri straine, dar si pentru ca in felul acesta se aeriseste, se usuca si va creste aluatul mult mai frumos.

Se pune drojdia uscata (eu folosesc de multi ani numai drojdie uscata) si zaharul si se amesteca, apoi se adauga apa calduta si sarea.

Daca folositi drojdie proaspata, faceti maiaua separat din drojdie, zahar, 50 ml apa si 1 lingura faina, totul amestecat bine si lasat la crescut pana-si dubleaza volumul.

Apa nu se adauga toata odata, se pun mai intai 300 ml, sa fie calduta, nu fierbinte si se amesteca bine aluatul. In functie de cat de uscata sau umeda este faina, aluatul va mai cere apa sau faina, asa ca veti adauga ce are nevoie. Este bine sa fie un aluat potrivit-spre moale, pentru ca la framantat, atunci cand se pune grasimea, se va mai intari.

Se ung mainile si peretii vasului cu untura sau unt si se incepe framatarea, mereu aducand aluatul de pe margine spre interior. In felul acesta se va ingloba aer, care va ajuta aluatul sa creasca.

Un mic sfat, pentru cel mai bun aluat

Daca aluatul se intoarce de pe o parte pe alta si nu se retine aerul in interior, nu va fi la fel de pufos. Dupa 5 minute de framantat, se tranteste aluatul de lighean de 10 ori. Da, ati citit bine: se tranteste. Trantiti bine, cu ciuda, dati-i bataie. & # 128578

In felul acesta, aerul inglobat se imprastie in tot aluatul si veti vedea cum aluatul devine mult mai fin si mai elastic.

Mai framantati inca 5-10 minute si busiti aluatul bine de inca 10 ori. Pare ciudat poate, dar va rog sa faceti asa si o sa ma pomeniti. La final de bine, dar cand trantiti aluatul, puteti sa ma-njurati. 😀 Nana, Dumnezeu s-o ierte, trantea aluatul tare in covata de lemn (ea framanta cate 3-4 kilograme de faina odata, facea multe placinte) si incepea sa bodoganeasca dusmancele si barfitoarele din sat:

-Na, aiasta-i pintru tini, baba Saftà!

-Shà aiasta-i pintru tini, tata (tzatza) Constantinà!&hellip si la fiecare spunea ce rau i-a facut :))) Sa va spun ce aluaturi si ce placinte facea nana? & # 128578

Se acopera aluatul cu un servet curat si se lasa la dospit. Se vede ca aluatul este neted si elastic, nu se lipeste de mana.

Cateva trucuri pentru cea mai buna placinta ciobanului, placinta aperitiv

-Se acopera vasul cu folie de plastic si apoi se pune servet. Va creste mult mai repede.

-Daca in camera este mai rece, se aprinde cuptorul pentru 5 minute, cat sa fie caldut inauntru, se stinge focul si se baga vasul cu aluat inauntru. Se inchide usa de la cuptor si in felul acesta veti avea un dospitor simplu, acasa. Ati vazut acele dospitoare in patiserii, nu? 🙂 NU UITATI sa stingeti cuptorul. 😀

-Alta solutie este sa puneti apa calda, dar nu clocotita, intr-un vas si sa puneti deasupra vasul cu aluat, dar sa nu atinga apa. In maxim 30 de minute, aluatul e crescut. & # 128578

2. Se pregateste umplutura pentru placinta cu branza sarata

Se amesteca in parti mai mult sau mai putin egale branza framantata de oi, cas, urda, branza de burduf, ce aveti, in cantitate totala de 1 kg, la care se adauga ouale.

Ideal este sa folositi branza de burduf sau branza framantata, grasa, cu gustul acela aparte, usor iute. Gustul de cioban, cum spuneam noi, cand eram copii. & # 128578

Eu fiind in Italia, nu am avut branza de burduf (Doamne ce-mi lipseste branza romaneasca!) si am folosit 1 amestec de branzeturi rase, la care am mai adaugat parmezan ras.

E departe de gustul de branza de burduf, dar ne-am facut cat de cat pofta. & # 128578

Nana mai adauga 1 praf de piper si ardei iute uscat, pe care le pisa proaspat si o mana buna de jumari crocante, pe care le maruntea (dar nu prea tare).

Eu pun in plus si 1 lingurita de chimen, dar nu e obligatoriu. Se amesteca totul, trebuie sa iasa o pasta care sa nu curga, mai tarisoara.

3. Se pregatesc foile de placinta

Se rupe aluatul in 3 bucati. Fiind foarte pufos, se va rupe usor. Nu se framanta aluatul, doar se pune pe masa si se intinde.

Fiind crescut, se va intinde foarte usor. Se pudreaza masa cu faina din belsug si se pune faina si pe bucata de aluat, apoi se intinde cu facaletul(sucitorul, merdeneaua, melesteul).

Este bine sa fie cat mai subtire foaia. Fiind aluat dospit, va creste, dar va fi extrem de pufos dupa coacere.

4. Se face placinta

Se stropesc foile cu untura sau unt topit, apoi se aseaza umplutura si se ruleaza strans.

Sulul obtinut se rasuceste de la capete, asa cum se rasuceste un snur: cu mana stanga, se rasuceste in sus, cu mana dreapta se rasuceste in jos.

In felul acesta, sulul cu placinta va avea aspectul acela de rasucit.

Umplutura fiind mai tare, nu fluida, foaia de aluat nu se va rupe si umplutura nu va curge.

Se unge tava cu unt sau untura (ideal e sa fie o forma rotunda) si se pun foile de placinta in forma de melc. Se face mai intai un melc mic, iar celelalte 2 foi vin in continuare.

5. Cresterea placintei si pregatirea de cuptor

Se lasa placinta la crescut timp de 30 de minute, apoi se unge cu ou batut cu putin lapte si sare, apoi se pune deasupra si cam 1 lingura de unt.

Se mai lasa deoparte 1 lingura de unt. Nana folosea unt de oaie si nu va spun ce bun era! Am ani buni de cand nu am mai mancat. 🙁

6. Coacerea pentru reteta de placinta ciobanului

Se baga in cuptor, mai intai la foc mic (160 de grade Celsius, pentru 10 minute), apoi se mareste focul la 180 de grade Celsius (foc mediu). In felul acesta, placinta va creste incet, fara sa se crape.

Se verifica dupa 40 de minute si se face proba cu scobitoarea. Daca scobitoarea este curata, uscata, placinta este gata. Coacerea dureaza intre 50-70 de minute, in functie de cuptor.

Se scoate din cuptor si imediat se unge cu restul de unt ramas. In felul acesta, coaja va fi moale, lucioasa si parfumata.

Doamne, ce parfum are placinta asta.

Asa arata in sectiune, dupa ce am lasat-o sa respire 15 minute. E taiata calda, ca nu se poate cu pofticiosii. & # 128578

E mult de scris, am vrut sa spun toate secretele pe care le stiu, iar daca vetiproba aceasta reteta de placinta ciobanului, va garantez ca nu veti regreta. E minunata.

Topul mancarurilor specifice romanesti

Putine dintre retetele pe care le consideram traditionale romanesti sunt specifice doar tarii noastre sau originare de pe aceste meleaguri. Cele mai multe sunt dovada influentelor culinare ale popoarelor cu care am interactionat pentru perioade mai mari de timp (rusi, serbi, bulgari, unguri, turci etc.). Exista insa cateva feluri de mancare care ating romanul la suflet, indiferent din ce zona a tarii este, si despre care nu poti spune ca sunt altfel decat romanesti.

Mamaliga cu branza si smantana

Felul traditional de mancare, simplu, sanatos si hranitor, pe care il alegi in orice restaurant rustic din Romania, chiar si atunci cand esti la cura de slabire si mai ales daca esti cu copiii. Poate include orice tip de branza (proaspata de vaci, telemea, cas, branza de burduf etc.), mamaliga se face mai vartoasa sau mai moale, in functie de bucatar, iar smantana este cea mai buna cand incerci preparatul intr-un sat de munte. Poate fi servita la fel de bine ca aperitiv, dar si ca fel principal si este o reteta destul de simplu de abordat si acasa.

Piftia sau racitura

Echivalentul unui aspic din carne si legume, in forma sa populara, piftia este una dintre mancarurile potrivite pentru iarna – primavara. Desi este un preparat servit rece, este suficient de bogat in proteine si grasimi pentru a sustine necesarul organismului in anotimpul friguros.

Se obtine prin fierberea de lunga durata a bucatilor de carne, in combinatie cu oase si articulatii, de pe urma carora se obtine textura gelatinoasa. Poate fi preparata din orice tip de carne, dar cel mai frecvent se realizeaza din picioarele si urechile porcului taiat de Craciun, sau din carne de curcan ori cocos. Reteta presupune si legume (morcov, ceapa, usturoi), plus o serie de condimente, adaugate dupa gust.

Pentru un aspect mai rafinat, se toarna calda in forme deosebite (rotunde, patrate etc.) si fie se consuma direct, fie se rastoarna si se taie in felii. Similar retetei anterioare, si acest fel traditional de mancare poate fi servit cu rol de aperitiv sau fel principal.

Tochitura este o mancare romaneasca de categorie grea, perfecta pentru zilele geroase de iarna, alaturi de o cana de vin fiert. Se prepara din orice fel de carne sau mai multe tipuri de carne combinate impreuna, din costita, organe, carnati, si se serveste impreuna cu mamaliga, oua prajite ochiuri si o branza cu gust pregnant (de burduf sau telemea).

Este o mancare grea, intampinata de multe ori cu un pahar mic de tuica, pentru stimularea secretiei de suc digestiv. Toata aceasta aglomerare de proteine si grasimi merge foarte bine cu muraturi sau mujdei de usturoi. Are o incarcatura calorica ridicata si, pentru ca se digera greu, este mai potrivita pentru masa de pranz, decat pentru cina.

Baked beans

Imprumutata din obiceiurile alimentare ale turcilor si bulgarilor, iahnia de fasole este o mancare gustoasa, regasita atat in bucataria familiala, cat si in restaurantele cu pretentii. Se obtine din fasole fiarta si zdrobita, amestecata cu usturoi si prajeala de ceapa, cu bulion sau suc de rosii. Forma sa finala este cea de pasta, pe care o poti obtine foarte usor cu un blender de mana sau un mixer cu bol, profesional sau standard, in functie de cat de fina doresti sa fie textura.

Se poate servi atat cu mamaliga, cat si cu paine, insotita de muraturi, castraveti sau gogosari in otet etc.

Daca inca mai speri sa citesti ca un anume fel de salata este mancare traditionala romaneasca, te vom dezamagi inca o data. Cotinuam cu un preparat la fel de provocator pentru aparatul digestiv ca si tochitura sau piftia: sarmalele, obtinute in mod traditional din carne tocata de pui, vita, porc etc. in combinatie cu orez, sare, piper si diverse condimente.

Amestecul este impachetat de obicei in frunze de vie sau de varza murata, dar daca vrei sa incerci ceva nou si putin mai aromat, le poti inlocui cu frunze de stevie, de spanac sau de hrean. Este una dintre retele asociate si cu diverse evenimente religioase, fiind de regula pregatita la pomene si inmormantari, dar si cu sarbatorile principale ale anului (Craciun, Paste).

Cele mai gustoase ies cele fierte in oale de lut, dar poti obtine sarmale delicioase si in recipiente moderne de gatit. Daca reteta cu carne ti se pare putin cam greoaie la stomac, esti vegetariana sau tii post, poti inlocui acest ingredient cu ciuperci. In cazul in care observi vreo diferenta de gust, va fi cu siguranta in plus fata de reteta cu carne.

Ciorba de potroace

Completam lista si cu o ciorba de legenda, obtinuta din organe de pasare (curcan, pui, rata etc.) si legume, cu condimente dupa gust, acrita cu zeama de varza. Este un preparat foarte hranitor, mai putin dificil ca digestie decat ciorba de burta, care poate fi obtinut la un pret redus, oferind o concentratie ridicata de proteine si alte substante nutritive.

Nu putem uita vestitul desert obtinut din grau sau orz, fiert foarte bine, amestecat cu zahar sau miere. Ornata adesea cu bombonele mici si colorate, cacao si zahar pudra, coliva este un preparat cu o istorie indelungata si utilizare exclusiv la evenimente cu conotatie religioasa (inmormantari, pomene, praznice etc.). Are un gust foarte placut, este un preparat simplu ca si compozitie, dar destul de dificil de facut pentru ca boabele de orz si grau trebuie fierte foarte bine.


Bulz ardelenesc adaptat

Va povesteam ieri ca nu am scapat pana nu am pregatit un bulz ardelenesc. Din ratiuni practice, a trebuit insa sa-l adaptez: in locul ceaunului pentru mamaliga am folosit o banala oala, iar in locul boturilor de mamaliga “indopate” cu branza si, eventual, cu bucatele de carnati sau pastrama de oaie, am mers pe o asezare in straturi. Adica, straturi de mamaliga pripita, afumatura si branza de burduf, peste care am “aruncat”, la final, niste oua ochiuri. Iar in locul coacerii “bulzelor” de mamaliga pe gratar, a trebuit sa ma multumesc cu o trecere rapida prin cuptorul incins. Este, de fapt, varianta de bulz ardelenesc pe care o gasiti in meniurile multor restaurante, fiind mai usor de pregatit.

In privinta “umpluturii”, pe langa o branza buna de burduf, am folosit niste bacon, nu prea gras pentru a nu da chiar o lovitura “mortala” stomacului :). Pentru un plus de gust, am facut insa mamaliguta nu doar cu apa, ci si cu lapte. Jumatate apa, jumatate lapte! Atentie, eu am pregatit bulz pentru mai multe persoane (8 portii), asa ca ajustati cantitatile dupa dorinta! De asemenea, puteti varia, dupa preferinta, cantitatile de afumatura si de branza de burduf.

Ingrediente (pentru 8 portii):

– malai 500 g
– lapte 1 l
– bacon 300 g
– branza de burduf 500 g
– oua 8 buc.
– unt 50 g
& # 8211 salt, pepper

– ulei pentru prajirea oualor

Preheat the oven to 190 degrees Celsius. Intr-o tigaie nonaderenta, puneti baconul la calit. Fara alta grasime! Lasati-l sa se rumeneasca un pic si luati de pe foc. Puneti la fiert laptele, completat cu un litru de apa (daca nu vreti sa puneti si lapte, puneti doi litri de apa). Adaugati un praf de sare si un pic de malai. Lasati sa clocoteasca si incepeti sa puneti malaiul, in ploaie, amestecand continuu cu un facalet sau o lingura mare de lemn ori batand cu un tel-para mai mare (astfel, va asigurati ca nu se formeaza nici un cocolos). Dupa ce ati pus tot malaiul, mai lasati pe foc cateva minute, amestecand in continuare.

In vase individuale (unul pentru o portie) sau in vase de Jena mai mari (mai multe portii la un loc), asezati un strat de mamaliguta. Distribuiti in mod egal baconul rumenit, asezati inca un strat de mamaliguta, apoi branza de burduf. Deasupra vine inca un strat de mamaliguta. Imprastiati, la suprafata, bucatele de unt. Bagati in cuptorul incins si lasati circa 20 de minute, pana cand bulzul capata o crusta apetisanta.

Separat, prajiti ouale, cate unul pentru fiecare portie. Ochiurile se asaza peste straturile de mamaliguta, afumatura si branza de burduf.

Puneti un pic de sare si de piper si serviti imediat. Daca va ramane, cumva, se poate reincalzi a doua zi (de preferat in cuptorul cu microunde pentru ca in cuptor s-ar usca in exces).
