I feel Romanian too

Today we celebrate Romania's National Day and I say "celebrate" because I also feel Romanian. I have been here in the country since 1996, and on September 12, 2011 I became a Romanian with the right documents, so I want to start by thanking you for receiving me and helping me to make my way beautiful among the ingredients of your kitchens.

Although I try to strictly observe my traditional holidays, together with my small family, I am very pleased to join my friends here and for your holidays. After all, the holidays are all over the world about family and reunion of loved ones, so I was honored when in my early years here, my colleagues at Casa Vernescu invited me to their homes for Christmas or other festive occasions, for to be part of them. I have a lot of respect for Romanians who respect their tradition, because that's how I was taught as a child.

In recent years, during the holidays, when my restaurants are usually closed, I try to run to the mountains, on the Prahova Valley, to relax. I really like the area. And when the children were little, it was a delight for them. I have traveled through the country and other places, I have been to Maramureș, Cluj, Transylvania in general, but also to Timisoara and Sibiu, which I like very much because you can see the Austrian influence and the peace there. A normal day there is like a Sunday in Bucharest. But I would not move from Bucharest, I would not be able to live outside it for more than a few days. To my shame, however, I have not yet reached the Delta. But I decided to do it this year, immediately after Easter, when nature is already green, but the mosquitoes have not yet woken up to life, so I can enjoy those places properly.

And because it's a holiday today, even if I don't eat beans, as is the tradition on December 1st, I will enjoy some eggplant salad, beef salad and some zacusca, my favorites.
